Red Crush: Sangiovese from Threemile Vineyard in the foothills of The Dalles, Oregon. This organic vineyard sits between a cherry orchard and a wild oak savannah at 900 ft elevation. The grapes are picked when the acid and sugars are balanced, and the flavor explodes on the palate. The fermentation takes around three weeks, and we use 20% whole cluster to add depth. The wine is then pressed through our hand-cranked basket press into large-format barrels. The wine spends a year in these barrels and at least a year in bottles before being released, resulting in a wine with flavors of sagebrush, cherries, dust, and whole-cluster baking spices. Cento per cento pairs great with your classic Italian dishes.
